Salade Nicoise

One of my favorite salad. It is easy to make and includes a flavorful combination of fresh vegetables along with hard-boiled eggs and tuna. It's filling and refreshing for a picnic lunch or an appetizer while having a friend over.


What we need :

8 cups water
8 ounces green beans, trimmed and halved
8 small red potatoes
2 eggs
1/4 cup minced shallots
1/4 cup red-wine vinegar
2 tablespoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
3 tablespoons extra-virgin olive oil
6 cups mixed salad greens
2 6-ounce cans chunk light tuna, drained
12 Nicoise or Kalamata olives
How to do it :

1. Bring water to a boil in a 3- to 4-quart saucepan. Add green beans and cook until just tender and bright green, 1 to 2 minutes. Using a slotted spoon, transfer the beans to a colander, rinse under cold water and set aside in a large bowl. Carefully place potatoes and eggs into the boiling water. Cook the eggs until hard, 12 minutes. Using a slotted spoon, transfer the eggs to the colander, rinse under cold water until cool and set aside. Continue cooking the potatoes until fork-tender, 3 minutes more. Drain the potatoes; rinse under cold water until cool enough to handle.
2. Meanwhile, combine shallots, vinegar, mustard, salt and pepper in a small bowl. Slowly whisk in oil.
3. Cut the potatoes into quarters or eighths, depending on their size. Add to the bowl with the beans. Add greens, tuna and the dressing. Toss well. Peel the eggs and cut into wedges. Divide the salad among 4 plates. Top with egg wedges and olives. Serve immediately.

Green Salad


 Ensalada Verde


One of the many favorite typical plates of my native country the Dominican Republic is "ensalada verde" or the famous green salad as many of you know it. This plate is the number one priority in my house's table because it feels weird eating lunch without a delicious salad to go with it. This salad can be customized. Also, there are many other ingredients that can be added to make it the way you like. The vinaigrette dressing is the most important ingredient of all. Please note that the quantity of ingredients used for the salad, would depend on the number of servings you want. The amount of ingredients I used for this recipe serves six people.

Items needed:

Lettuce
White onion
Avocado
Tomatoes
Sliced beets
White vinegar
Virgin olive oil
Sweet Corn
Salt
Steps to follow:
Have to make the dressing first
  •   Chop the onion and add two cups of white vinegar.
  • Then add 1/4 cup of virgin olive oil.
  •  Add salt.
  • Mix it up and put it aside for about 1½ hrs.
    .

 Lettuce

  • After you have washed the lettuce, chop it in pieces as you like.

  • Now, add the tomatoes, avocado, sweet corn, and chop beet. 

  • Final step is to pour the vinaigrette dressing making sure it covers the whole salad.
