Vori Vori Soup



There is nothing better than warming up a cold winter day than with a hot soup. The Vori Vori is a traditional Paraguayan dish that will keep you warm all winter long. Is a thick soup which has dumplings made of corn flour and cheese. Like any traditional dish in the Paraguayan gastronomy, the Vori Vori is rich in protein and calorie values. The name "Vori Vori" is in Guaraní, the Paraguayan indigena language. The word "Vori" which means "ball" in Spanish is an allusion to the balls of corn found in the broth. In Guaraní, the pluralization of a word is often done by repetition, that is, "Vori" is one, but "Vori Vori "is two or more. For the soup you can use either chicken, beef or just the vegetables.

Ingredients (serves 6) 

1 onion
1 big tomato
½ green bell pepper
1 carrot
4 chicken thighs
6 tablespoons of oil
200 ml of corn flour
1 cup of mozzarella cheese
a piece of squash
chicken broth 
parsley (optional) 
salt, cumin and pepper as desired

Directions
1. Cut vegetables in small pieces. 
2. Heat up the oil on a pan and cook the chicken for about 5 min.  
3. Add tomato, bell pepper and onion. 

4. Cook until the vegetables dissolve turning into a sauce. Add chicken broth, carrot and squash. Cover and let it cook. 

5. To make the balls, combine the corn flour and cheese and add a little bit of the broth from the soup.  


6. With your hands or a spoon, mix everything together and start making little balls.


7. Once the chicken is well cooked and the carrot and squash are soft enough, throw in the parsley and the balls. Finally, let it cook in high heat for about 3 more minutes. 

Sit down and enjoy!
