Chicken Pot Pie



Ingredients
     1 cup of potatoes
     1 cup of celery 
     1 cup of carrots
     1 cup of onions
     1/3 cup of butter
     1/2 cup of all purpose flour
      2 cups of chicken broth
      1 cup of half and half
      1 teaspoon of salt
      1/4 teaspoon of pepper
      4 cups of cooked and chopped chicken
      2 pie crusts 

Directions:
Preheat the oven to 400 degrees then chop the potatoes, celery, carrots and onions.
Then saute them in the butter for 10 minutes, then add the flour to the mixture and stir well and cook it for 1 minute.
Then combine broth and the half and half and then add in the vegetable mix.
Then cook over medium heat and stir it till his is thick and bubbly then add the salt, pepper and chicken, continue to stir well.
Pour the mixture into a 2 quart casserole dish and top with pie shells, place slits in the pie crust so the steam escapes.
Finally bake it for 40 to 60 minutes or till is golden brown on the outside and bubbly on the inside.
