Sushi Rice

Today, I'm going to share the recipe of making sushi rice for all the sushi lovers.
Ingredients:

2 cups sushi rice
2 cups water
4 tablespoons rice vinegar
3 tablespoons sugar
2 teaspoons salt
2 tablespoons mirin
kelp, leaf (optional)

Directions:

Ignore the directions on the bag that the rice came from and rinse the rice only 3-5 times. The water does NOT have to run clear.
Place rice to drain in a strainer.
Drain for one hourin the winter, 30 min in the summer. (Sounds strange, but is true).
While rice is draining, combine vinegar, sugar, salt and mirin together in a bowl and mix well.
If using a kelp leaf,it should be about 2 in long
Wipe it lightly, cut small slits to make it look like a comb and add it to a pot along with the water.
Add rice to the pot.
Bring quickly to a boil and then reduce to a simmer.
Cover the pot and DON'T touch it until the end, NO PEEKING.
10 Cook for 15 minutes before removing the pot from the heat but keep the lid CLOSED.
11 Let rice rest for 10 min and then remove the cover.
12 Place in a glass dish to cool and lightly fan the rice while adding the vinegar mixture.
13 Mix rice gently, careful not to break it.
14 Sushi rice is best used at body temperature

Lastly, enjoy !

Bubble tea

Bubble tea is very popular among Asian culture and most Asian restaurants have this in their menu. It is a tea based drink that comes with small chewy tapioca balls which are also known as "pearls" or "boba". There are many different kinds of bubble tea. There are the original tea versions and then there are the fruit versions which are more like smoothies. It comes in many different flavors as well. The one I'm going to explain how to make is the regular pearl milk tea.

Ingredients
1/4 cup dried boba tapioca pearls (you can find these in any asian grocery store)
1-2 tea bags (black tea)
1/2 cup water
1/2 cup sugar
Sweetened condensed milk
Ice

Directions
-Cook the tapioca pearls by measuring 2 cups of water for every 1/4 cup of boba into a pot. When the water is boiling, add the pearls and stir until they begin to float to the top (thats when you know they're ready)
-While the pearls are cooking, prepare a cup of tea. Bring 1 cup of water to a boil then add in tea bag. (preferably 2 tea bags for stronger flavor) Remove tea bags after about 15 minutes and let the tea cool down completely.

-Continue cooking pearls for about 15 minutes. Then turn off heat and let the pearls sit there for another 15 minutes.
-Making the sugar syrup for the pearls: bring 1/2 cup of water to a boil and then stir 1/2 cup of sugar until dissolved. Let cool
-Drain the pearls and put them in a small bowl. Pour the sugar syrup until pearls are completely soaked.
-Last of all, pour the tea into a cup of ice and add the pearls. Add sweetened condensed milk for sweetness.
